Those Guys Coffee Co. is a specialty coffee roaster in Pine Meadow, Connecticut, founded by Victor Tomasso and Parker Gregory Shpak on a simple idea: make specialty coffee accessible and delicious. They roast single origins and blends across the spectrum, from delicate light microlots to bold dark roasts, with a focus on tight quality control and ethical sourcing that pays farmers well above Fair-Trade prices.
Those Guys began with two people who came at coffee from opposite directions. Parker Gregory Shpak started behind the bar in 2013 and spent about a decade as a barista, working through Starbucks' Coffee Master program and competing in their first two national barista championships before moving into specialty coffee and then roasting. Victor Tomasso opened Dom's Coffee in Avon in 2015 and, with a background in aircraft mechanics, was drawn to the technical side of the craft. The two teamed up in 2018 and trained together at the SCA-certified Academy of Coffee Excellence in Williamsburg, Virginia, earning certificates in green coffee analysis and roasting. They launched Those Guys in 2019 and began selling in 2021, once the roasts and the vision were where they wanted them. The throughline is quality first: careful roasting, eleven checks on every batch, and sourcing that puts farmers ahead of the lowest price.
