

Epoch Chemistry Coffee is a third-wave specialty roaster and coffee house in Moncton, New Brunswick, founded in 2019. Roasting under the banner 'In Praise of Slow,' Epoch sorts its coffees by flavour, from chocolatey Epoch 6 to bright Epoch 9 and funky Epoch 3, and runs a tasting room with guided cupping experiences.
Epoch Chemistry was founded on a simple but enduring belief: coffee is more than a beverage. It’s a moment worth paying attention to. We see life not as a rush from one thing to the next, but as a collection of small, meaningful pauses. Coffee is our vehicle for creating those pauses, for connection, conversation, and community. A shared table. A familiar cup. A chance to slow down. We believe the era of convenience-at-all-costs is coming to an end. Coffee was never meant to be disposable or disconnected. It is agricultural, seasonal, sensitive, and alive, shaped by soil, climate, people, and care. From the land it’s grown on to the way it’s brewed, every step matters. The same coffee can taste remarkably different depending on how it’s handled, roasted, and prepared. That nuance is what draws us in. It’s why we keep learning, tasting, refining, and asking better questions. Great coffee demands attention, and rewards it. Our work is grounded in circularity and respect for the full journey of coffee. We honour the craft, the land, and the many hands involved long before a cup reaches the bar. We don’t chase shortcuts. We choose intention. We take inspiration from the great European coffee houses of the 17th and 18th centuries, places where a single cup granted access to ideas, debate, and shared curiosity. Those spaces proved that coffee could be a social equalizer: thoughtful, welcoming, and deeply human. Here in Moncton, we aim to carry that spirit forward. Epoch is an open, intelligent space where anyone can pull up a chair, whether to learn something new, share a conversation, or simply sit quietly with a good cup. Because just like community, great coffee is built slowly. This is our epoch. And this is why we brew In Praise of Slow.
