in·spired coffee roasters is an owner-operated third-wave roastery and cafe in San Diego's North Park neighborhood. They buy organic, ethically sourced green coffee in small quantities and roast it in small batches, which is what lets them keep the lineup moving: most of the menu is limited-release single origins that rotate as they come into season, alongside Muse, the house blend they describe as the one they reach for most. The bags carry the line "born in New York, roasted in San Diego" and the founders brought their cafe hospitality experience west from NYC.
