Múcaro Coffees: The Miami Gardens Wholesale Roaster That Listens First

The múcaro is a small owl, endemic to Puerto Rico. It works at night, it keeps the pests down in the coffee fields, and it does the whole job without drawing attention to itself. That is the name David put on his Miami roastery, partly because it points back to his family's coffee roots in Adjuntas, and partly because of what the bird stands for: knowledge, awareness, and quiet protection of the thing that is growing.

Disney, real estate, then a roastery
Coffee was in the family long before it was a job. David grew up with it through his family's roots in Adjuntas, in the coffee mountains of Puerto Rico, but his own career started nowhere near a roaster. He worked at Disney's Grand Floridian Resort, where he says he learned his best lessons in hospitality, and then he went into real estate. In 2012 he came back to the coffee and founded Múcaro Coffees in Miami.
The turning point was a trip to California. He started learning the craft properly, through ABC Coffee School and through Ken Davids of Coffee Review, and something moved. "I fell in love with the roasting, cupping, people, and process," he says. "I realized I didn't simply want to sell coffee. I wanted to understand it, craft it, and eventually teach others about it."
The owl came with the heritage. "Múcaro connects us to Puerto Rico and my heritage, while the owl itself represents knowledge, awareness, and the natural protection it provides within agricultural ecosystems," he says. "For us it symbolizes our responsibility to honor the work behind the coffee, roast with intention, and create meaningful connections between producers, our partners, and the people enjoying the cup."
Roasting philosophy: listen first

Ask David what the Múcaro style is and he pushes back on the question. There is no house profile that every coffee gets bent toward. "Instead of forcing every coffee into a Múcaro flavor profile, we start by asking, what does this coffee naturally have to offer?" The roast is then built to bring that forward: sweetness, balance, clarity, character. "In many ways our roasting philosophy mirrors our company philosophy. We listen first."
Sourcing built on people
The map behind that is mostly Latin America, and it is built on people rather than lot lists. Colombia has been the deepest relationship, through Coffeelipe & Friends, Finca Chambakú, and now Alejandro Macías at Finca Lusitania. Brazil is the next chapter, with a trip to Minas Gerais and the Mogiana to meet the producers behind the next container. Central America is coming back into the rotation too, including a recent visit to Finca Santa Emilia in Honduras. "We believe collaboration should begin long before the coffee reaches our roastery."

A wholesale coffee partner for cafés and restaurants
Múcaro has been a wholesale house since 2012, and that shapes almost everything about how it operates. The pitch is not a better bean than the roaster down the street. It is what gets built around the bean.

"It starts with something very simple," David says. "If we say we're going to be there, we're there." Reliability sounds like a low bar until you have run a café and had a delivery not turn up. From there it widens: barista education, in-house technical support, equipment, menu development, private label, quality control, and a working understanding of the economics behind the cup. "Our goal is to be a coffee partner, not simply a coffee supplier."

The teaching side got formalized as the Múcaro Coffees Academy. "Everything we've learned through experience, SCA education, producers, roasting, equipment, and hospitality was never meant to stop with us," he says. The Academy exists to hand that to baristas, partners, and anyone else who wants to understand what is happening in the cup.
Retail, for the people who kept asking
Retail is the newer piece, and David is careful about how he frames it. "Retail isn't a shift away from wholesale, it's an expansion of the Múcaro ecosystem." Guests at the restaurants and cafés Múcaro serves kept asking where they could buy the coffee for home. Now they can.
What is in the cup
Soflo, the house blend, has been a customer favorite since the beginning and is not going anywhere. As of August 2026 the one David kept reaching for was Yirgamo, a Brazil and Ethiopia blend, alongside a run of limited releases: Colombian Cherry Bomb, Costa Rica Catigua, Colombian Pink Bourbon. At home he drinks them as espresso, because the concentration is where the sweetness, balance, texture and character land hardest.
