Course Coffee Roasters is a small roastery and cafe in the Frenchtown district of St. Charles, Missouri, on North 2nd Street. They roast in small batches on a US Roaster Corps drum, buy through direct trade importers, and sell a rotating set of single origins alongside a full coffee bar, with a monthly subscription box for people who want the rotation sent to them.
Course is run by people whose own paths were changed over coffee. They met working at different shops, found shared interests, hardships and growth around coffee, and started travelling and tasting complex roasts until refining and sharing that experience became the point. They moved from homes in Pennsylvania and Florida to St. Charles, Missouri, which is now home to Course and to them. What they say makes Course different is small-batch profile roasting that leans on attention, instinct and trade skill rather than technology, and sourcing through direct trade importers so they know the farms and organisations growing the crop. In their words, coffee is a means to deepen relationships and bring people together.
