About

Aerís Roasting Co is a two-brother micro-roastery in Iroquois, in east central South Dakota, run by Shawn and Brandon Ensz. They roast to order on an air roaster, buy named lots from a handful of importers rather than anonymous house blends, and keep the menu deliberately short and the prices honest.

Our Story

Shawn and Brandon Ensz had been messing about with brewing and roasting for years before Aerís existed, starting with a couple of ounces at a time in a stripped down air popcorn popper in their parents' basement, which they will tell you is not recommended. What it did teach them was the difference between coffee roasted fresh and coffee that has sat for weeks or months. In February 2015 they bought a small 6 lb air roaster and set out to bring competitively priced, freshly roasted coffee to friends and family, and it grew from there. The name came from the roaster: they wanted one simple word for air, tried Italian first and rejected Aria, and eventually landed on the Latin Aeris, which they pronounce either air-riss or, on international days, ah-rees.
