Wisconsin Coffee Roasters

Milwaukee anchors Wisconsin's eastern specialty coffee scene. Colectivo Coffee — founded as Alterra in 1993 and rebranded after the original Alterra brand was acquired — is one of the larger indie roasters in the upper Midwest, with multiple cafes across Milwaukee and Chicago plus a wholesale program reaching nationally. Canary Coffee Bar, Discourse Coffee Workshop, and Hawthorne Coffee Roasters round out the city's 11 active independent roasters. The Milwaukee scene has matured alongside the city's brewing-and-restaurant reinvention, with operators running their own cafes alongside wholesale supply lines. Cedarburg's Cedarburg Coffee Roastery and Sheboygan's Torke Family Coffee Roasters extend the eastern Wisconsin reach.

Madison runs Wisconsin's other major specialty scene. Ancora Coffee Roasters, Barriques, EVP Coffee, and Forward Craft & Coffee anchor a downtown, State Street, and East Side specialty corridor with 10 active independent roasters serving UW-Madison and the state government. Madison's coffee culture has grown alongside the city's broader food scene, and the customer base — shaped by university research and a politically active community — tends to ask informed questions about sourcing. The interplay between Milwaukee and Madison keeps the state's coffee culture from feeling like a single-city scene.

Wisconsin's most distinctive coffee operators are arguably the rural ones. Wonderstate (formerly Kickapoo Coffee) in Viroqua has been one of the country's most-cited fair-trade-and-organic operators for two decades, with national wholesale presence and a Driftless Region operating identity that's become part of the brand. Ruby Coffee Roasters in Nelsonville is similarly nationally-known — a small Stevens Point-area operator whose lots regularly appear on specialty cafe menus across the country. Bayfield's Big Water Coffee Roasters serves the Apostle Islands corridor. Sturgeon Bay's Door County Coffee & Tea Co. anchors the peninsula's tourism economy. Watertown's Berres Brothers, Neenah's Bedrock, Appleton's Copper Rock, Delavan's Boxed and Burlap, East Troy's Geneva Lake Coffee Roasters, and Superior's ARCO round out a state whose 79 active independent roasters reach genuinely beyond the metros.
