Idaho's specialty coffee scene has grown from a handful of pioneers into a legitimate destination for craft coffee. Boise is the epicenter, a city whose rapid growth has brought an influx of food and drink culture, with independent roasters leading the charge. You'll find everything from light-roasted single origins to creative blends designed for the outdoor-adventure crowd.
Outside Boise, Idaho's roasters often reflect the communities they serve. Coeur d'Alene and Sandpoint roasters cater to the lake-and-mountain lifestyle of the north. Coeur d'Alene has Coeur d'Alene Coffee Company, DOMA Coffee Roasting, Lake City Coffee, Maha Coffee Roasters, Panhandle Cone & Coffee, Rebel Joe Coffee, Roasted Coffee Company, Terre Coffee & Bakery, Union Roasters, and Vault Coffee. Twin Falls and Idaho Falls bring specialty coffee to the southern half of the state. These aren't satellite outposts of a coastal trend. They're homegrown operations built by people who chose Idaho and decided it deserved great coffee.
What's exciting about Idaho is the momentum. New roasters are opening regularly, existing ones are investing in direct trade and higher-quality sourcing, and the customer base is increasingly educated about what separates commodity coffee from specialty. It's a scene that's still being built, which means there's a real sense of discovery.
